These Japanese Ume plums are harvested at the perfect stage for making Umeshu (Japanese liqueur), Umeboshi (pickled/salted), and Ume syrup. They are green and firm with the right amount of yellow blush and deep fragrance. This short window of harvest is only for ~2 weeks! *Ume plums are not to be eaten raw.*
Arturo has tended to these Japanese Ume trees for nearly three decades with pride, and you can tell just by looking at the orchard. He shapes all the trees, controls weeds around the orchard manually, and doesn't apply any sprays, fertilizers, or inputs. He harvests much later than commercial growers by pushing the blush on the ume before they start to fall of the trees--a fine line to balance!
