They use a technique called dry farming, which involves cutting off the irrigation early in the season to drive the plants' roots deeper into the earth in search of water. This stress yields fewer, smaller tomatoes with a concentrated flavor, great acid balance, and notable minerality.

Over 15+ seasons, farmer Joe Schirmer has selected the best Early Girl fruit, saved their seeds, and grown them out the following season. Over time this has produced a tomato that is veritably theirs: the dirty girl tomato.
